Jess' Bakes and Cooks: Simple Green Bean with Barley Soup


Green bean soup is a chinese dessert which is said to have many health benefits. It cools the heaty body during hot/hazy weather and also helps in detoxification, flushing out toxics. Hence, some people believes, green bean soup, with little or no added sugar, can help in reducing fats/weight! 

With the added barley, not only does it enhance the taste with its chewy texture, it also helps to cool the body and reduce water retention! 

The haze in Singapore has been pretty bad the whole of September and I have been boiling this soup every other week.

I have decided to share this very simple recipe that requires only 3 ingredients. No pandan leaves are used as I prefer recipes that are easy and tastes good at the same time. 

You may choose to add mini sago pearls too if desired. Just bring a small pot of water to boil and add in the pearls. Let it simmer on low heat for 10 minutes. Some pearls will be semi translucent. It's ok because you will boil it in the main pot of soup later. Drain pearls through a strainer and run them under cool water for a couple of seconds. Leave aside till later use.

Ingredients: (Serving for 4 to 5, small bowls)
1/2 cup green beans
1/4 cup barley
5 and 1/2 small bowls water (use serving bowl to measure)
Rock Sugar to taste
1. Wash green bean and barley till clean.
 2. Soak washed green beans and barley in water for at least 1/2 hour.
 3. Bring pot of water to boil before adding in the soaked green beans and barley. Cook it under medium heat for 40 to 60 minutes, depending on how splitted the beans you like it to be. Stir the cooking soup every 10 minutes interval.

4. Add rock sugar to taste. Add it one at a time and ensure fully dissolved before adding more. Rock sugar take time to dissolve, hence adding too much at one time might result in the soup being too sweet!(Add the cooked sago pearls at this stage too if using.)
Soup can be served as a hot or cold dessert after meal. Soup can be kept in the refridgerator for up to 2 days.
